·        One of the most famous Georgian red semi-sweet wine is made from selected Saperavi grapes. Before processing, the temperature of the highest quality grapes is dropped to 20°C. The fermentation is stopped when the sugar level drops down to 45g/l by blast chilling. Wine is stored at a temperature of -3C° for 3-6 months before filtering and bottling.
